To make these cookies, you will need 1 cup of whole wheat flour, 1/4 cup of almond flour (or finely ground almonds), and 1/3 cup of raw Coriander Honey, which should be pure, natural, and unprocessed. For richness, add 1/4 cup of melted butter coconut oil if you prefer a dairy-free option). You’ll also need 1/2 teaspoon of baking soda, a pinch of salt, and 1/2 teaspoon of vanilla extract for flavor. If you like a warm touch, you can also add a pinch of cardamom powder. Optionally, keep some sliced almonds to press on top for a nice look and crunch.
How to Make :
Step 1 – Preheat the oven
Start by setting your oven to 350°F (180°C). This allows your oven to reach the right temperature while you prepare the dough. Line a baking tray with parchment paper or lightly grease it with oil or butter so the cookies don’t stick while baking.
Step 2 – Prepare the wet mixture
In a large mixing bowl, pour 1/3 cup of raw Coriander Honey and 1/4 cup of melted butter (or coconut oil). Add 1/2 teaspoon of vanilla extract. Whisk everything together gently until the honey and butter are well blended and the mixture looks shiny and smooth.
Step 3 – Mix the dry ingredients
In another bowl, add 1 cup of whole wheat flour, 1/4 cup of almond flour, 1/2 teaspoon of baking soda, a pinch of salt, and a pinch of cardamom powder (optional). Mix all dry ingredients well using a spoon or fork so that everything is evenly distributed.
Step 4 – Combine wet and dry
Slowly add the dry ingredients into the wet mixture. Mix with a spatula or your hands until a soft dough forms. If the dough feels too sticky, let it rest in the fridge for 10 to 15 minutes—this helps make shaping easier.
Step 5 – Shape the cookies
Once the dough is ready, take a small portion (about 1 tablespoon) and roll it into a ball. Place it on the prepared baking tray and gently press it down with your fingers or the back of a spoon to flatten it slightly. Repeat for the rest of the dough, leaving enough space between each cookie. If you want, press a sliced almond in the center of each cookie for decoration.
Step 6 – Bake the cookies
Place the tray in the preheated oven and bake the cookies for 10 to 12 minutes, or until the edges start turning golden brown. The cookies may still be soft in the center, which is fine—they will firm up as they cool.
Step 7 – Cool and store
