Ingredients:
To make this pumpkin bread, you will need 1 cup of pumpkin puree, which can be from a can or made fresh at home. You’ll also need 1/3 cup of raw organic Wildflower Honey—For moisture, add 1/3 cup of vegetable oil or melted coconut oil and 1/4 cup of milk, A teaspoon of vanilla extract adds a lovely aroma. For the dry mix, you’ll use 1 and 1/2 cups of flour (whole wheat or all-purpose), 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt, 1 teaspoon of ground cinnamon, and 1/4 teaspoon of ground cloves (optional, for extra spice). If you enjoy a bit of crunch, add 1/2 cup of chopped walnuts or pecans.
How to Make:
Step 1: Preheat the Oven and Prepare the Pan
Preheat your oven to 350°F (175°C). Take a 9x5 inch loaf pan and either grease it lightly with oil or butter, or line it with parchment paper. This step ensures that your bread won’t stick to the pan after baking and makes it easier to lift out once it's done.
Step 2: Mix the Wet Ingredients
In a large mixing bowl, combine your wet ingredients: pumpkin puree, raw Wildflower Honey, oil, milk, and vanilla extract. Whisk these ingredients together until the mixture is smooth and creamy. This helps evenly distribute the flavors and gives the bread a rich, moist base.
Step 3: Combine the Dry Ingredients
In another bowl, add the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and cloves. Mix everything thoroughly using a spoon or whisk so the baking agents and spices are evenly spread throughout the flour.
Step 4: Mix Wet and Dry Ingredients Together
Slowly pour the dry ingredient mixture into the bowl with the wet mixture. Use a spatula or large spoon to stir gently. Mix only until you no longer see any dry flour. Overmixing at this stage can make the bread tough instead of soft. If you’re using chopped nuts, fold them into the batter now for a crunchy texture.
Step 5: Fill the Loaf Pan
Pour the batter into your prepared loaf pan. Use a spatula or the back of a spoon to spread it evenly and smooth the top. This ensures the bread bakes evenly and rises nicely with a smooth surface.
Step 6: Bake the Bread
Place the loaf pan in your preheated oven and bake for 45 to 50 minutes. Try not to open the oven door too early. After 45 minutes, insert a toothpick into the center of the loaf. If it comes out clean or with just a few moist crumbs, your bread is done.
Step 7: Cool and Slice
Carefully remove the pan from the oven and set it on a cooling rack. Let the bread rest in the pan for 10 minutes before removing it. Then lift it out and allow it to cool completely on the rack. Once cooled, slice and enjoy — plain, toasted, or even with a little more honey spread on top
