Honey-Based Ice Cream

homemade ice cream with local pure honey

Ingredients :

To make this smooth and creamy ice cream, you will need 2 cups of heavy whipping cream, 1 cup of whole milk, and 1/2 cup of raw Sidr Honey, which gives it a deep, rich sweetness with a slightly earthy undertone. You’ll also need 1 teaspoon of pure vanilla extract to add flavor and balance. Optional add-ins include a pinch of sea salt, crushed nuts, or dry fruits for added texture.

How to Make :

Step 1 – Prepare the honey milk base
Begin by taking a large mixing bowl and pour in 1 cup of whole milk. Add 1/2 cup of raw Sidr Honey to the milk and stir thoroughly until the honey dissolves completely. This may take a minute or two, especially if the honey is thick. If needed, you can slightly warm the milk (just lukewarm, not hot) to help dissolve the honey faster. This mixture forms the sweet base of your ice cream and ensures even distribution of flavor.

Step 2 – Add cream and flavoring
Once the honey and milk are well combined, add 2 cups of heavy whipping cream to the bowl. Then add 1 teaspoon of pure vanilla extract. Gently whisk the mixture until everything is fully blended and smooth. The mixture should now be creamy, lightly sweet, and rich in aroma from the honey and vanilla.

Step 3 – Chill the mixture
Cover the bowl with a lid or plastic wrap and place it in the refrigerator for at least 2 hours, or until the mixture is completely cold. Chilling the base before churning is very important — it helps the ice cream churn better and gives it a smoother, creamier texture.

Step 4 – Churn the ice cream
Once the mixture is well chilled, pour it into your ice cream maker and churn it This usually takes about 20 to 25 minutes, and you’ll see the mixture thicken to a soft-serve consistency. If you don't have an ice cream maker, pour the mixture into a freezer-safe container and place it in the freezer. Every 30 minutes for the next 3 to 4 hours, take it out and stir vigorously with a fork or whisk. This helps break up ice crystals and mimics the churning process.

Step 5 – Freeze until firm
After churning (or after a few hours of manual mixing), transfer the ice cream into a lidded container. Spread it evenly and smooth out the top. Seal the container and place it in the freezer for at least 4 to 6 hours, or overnight, until the ice cream becomes firm and scoopable.

Step 6 – Serve and enjoy
Before serving, let the container sit at room temperature for about 3 to 5 minutes so the ice cream softens slightly and is easier to scoop. Scoop into bowls or cones and serve as-is, or garnish with toasted nuts, crushed dry fruits, or a drizzle of extra Sidr Honey for a glossy finish and flavor boost.
